225g self-raising Flour
40g Light muscovado sugar
½ tsp Mixed spice
1 Large Egg
6 Tbsp Milk
- Rub butter and flour together until it resembles bread crumbs
- Add sugar, sultanas, and mixed spice.
- Mix in beaten egg and milk.
- Bring together to form a dough.
- Roll out on floured surface no thinner than 2cm
- Cut with a scone cutter.
- Do not twist the cutter as the scone will bake unevenly.
- Bake in preheated oven 180c gas 6 15mins.
