Spiced Scones

225g self-raising Flour

75g Butter

40g Light muscovado sugar

75g sultanas

½ tsp Mixed spice

1 Large Egg

6 Tbsp Milk

  1. Rub butter and flour together until it resembles bread crumbs
  2. Add sugar, sultanas, and mixed spice.
  3. Mix in beaten egg and milk.
  4. Bring together to form a dough.
  5. Roll out on floured surface no thinner than 2cm
  6. Cut with a scone cutter.
  7. Do not twist the cutter as the scone will bake unevenly.
  8. Bake in preheated oven 180c gas 6 15mins.
