Hot Cross Bun and Lemon Pudding

Ingredients

6 left Over Hot Cross Buns

200g Lemon Curd

200 mil Cream

200 mil Milk

4 Tbsp Cater Sugar

Butter

3 Eggs

Method

  1. Cut buns and sandwich back together with butter and lemon curd.
  2. Arrange in a buttered dish.
  3. Whisk together eggs, milk, cream, sugar and the remainder of the lemon curd.
  4. Pour over buns.
  5. Leave to soak for 15-20 mins.
  6. Place in a dish and add hot water halfway.
  7. Bake in preheated oven 160c for 35-40 mins.
